das Englische und Englisch sind unterschiedliche Wörter. das Englische ist das substantivierte Adjektiv von englisch. Ohne Artikel heißt das Wort Englisches. Englisch ist dagegen eine "Adjektiv-Substantiv-Konversion" (zumindest nenne ich die Wortbildungsart so) von englisch. English has 'borrowed' words from Latin, because Latin has only ever been spoken in England in extremely restricted circles. French, on the other hand, was the language of the dominant class for a couple of centuries. Words from that language have simply become part of English and make it what it is, in the same way that words from Scandinavian languages spoken by people who settled in England did. THe concept of borrowing in these circumstances seems slightly absurd.
